  • INGREDIENTS

    • 45mL Chardonnay Barrel Gin
    • 30mL fresh lemon juice
    • 10mL apricot brandy (or simple syrup)
    • 1 Bar Spoon quince paste
    • Egg whites (or aquafaba)
    • Sage leaf
  • METHOD

    • Add all ingredients to a shaker with ice, shake and fine strain into a Coupette
    • Garnish with a a sage leaf
